Recipe for brownies so simple kids can make

Chocolate and macadamia brownies the kids can make. 

HERE'S an easy recipe to involve your kids in the kitchen, and the results are yummy. As always, when I devise a recipe that isn't very healthy, I offer the excuse that at least you know what you're eating if you make it yourself. And These moist, chewy brownies contain macadamia nuts but you can use any nuts really. This is a great recipe to get the kids to help with. Once kids become interested in coooking through making treats, you can progress to healthier recipes.I'll present a recipe for a kid-friendly vegetable slice in the coming weeks.

Chocolate and macadamia brownies


 300g unsalted butter  

 2 cups caster sugar  

 4 large free-range eggs  

 1 tsp vanilla essence  

 1 1/2 cups plain flour  

 1 cup good-quality cocoa  

 200g dark chocolate, cut into rough chunks  

 80g raw macadamia nuts, roughly chopped.

METHOD: Preheat oven to 180C. Grease a 30cm x 20cm lamington tin or line with baking paper.

Cream butter and sugar together in a large bowl until pale and fluffy. Break an egg into a cup and add slowly to the butter/sugar mixture, beating constantly. Repeat with remaining eggs. Add vanilla essence.

Sift the flour and cocoa together, and fold in, along with the macadamia nuts. Pour batter into the prepared tin, and bake on the middle shelf for 25-30 minutes. Do not overcook. Cool in the tin and then cut into squares. Makes 9.
